Senior Community Dining: Superfood – Apples

November in Arizona, is a great time to make all the delicious autumn meals and treats. This November, our senior community dining superfood is apples. The Dining Services teams at our Goodyear senior community and Chandler senior community are focusing on apples. Both communities will include this superfood in their featured dishes, like the recipe below.
Apples are nutritious and a versatile fruit that offers numerous health benefits for seniors. They are packed with fiber and other essential vitamins and minerals. Apples can also be easily incorporated into a variety of dishes, from sweet to savory. This is a perfect treat for senior community dining and delivers health benefits for our independent living and assisted living residents.
Baked Apple & Sweet Potato Dish
Ingredients:
- 2 fresh red delicious apples
- 2 sweet potatoes
- 2 tsp unsalted butter
- 1/3 cup dark brown sugar
- 2 tsp all-purpose flour
- 2 tsp ground cinnamon
- ½ cup dried cranberries
Directions:
1. Preheat oven to 350F Degrees.
2. Peel and slice sweet potatoes and apples and place in a bowl.
3. Sparingly grease 8×8 baking dish with butter and sprinkle some of the brown sugar on the bottom.
4. Add flour, cinnamon, cranberries and brown sugar to the sliced apples and sweet potatoes.
5. Layer mixture in baking dish with brown sugar.
6. Dot with butter and bake for 45 minutes.
7. Enjoy!
