The start of fall is right around the corner for those living in Arizona, and with that comes the start of our monthly superfood spotlight for dining in retirement! This month, the team at Robson Reserve at PebbleCreek in Goodyear, Arizona and the dining services team at Robson Reserve at Sun Lakes near Chandler, Arizona are focusing on different herbs and spices. The superfood of the month is featured in several dishes served at our senior community, including a whole-wheat couscous salad dish. Herbs and spices are a nutritional powerhouse, packed with vitamins, minerals, and antioxidants. They’re also a delicious addition to both sweet and savory dishes.

Discover a new way to incorporate herbs and spices with this refreshing and flavorful whole-wheat couscous salad. This salad is a perfect way to enjoy the health benefits of herbs and spices while also treating yourself to a delicious, refreshing salad perfect for dining in retirement.

Whole-wheat Couscous Salad with Fresh Herbs & Pistachios

Ingredients:

  • 1 cup whole wheat couscous (dry)
  • 2 cups water
  • 1/8 tsp kosher salt
  • 1/3 cup fresh parsley (chopped)
  • 1/4 cup fresh mint (chopped)
  • 1/3 cup fresh cilantro (chopped)
  • 4 fresh scallions (thinly sliced)
  • 1 cucumber (peeled and dried)
  • 1 fresh tomato (diced)
  • 1/3 cup pistachio nuts (toasted)
  • 1/3 cup dried cranberries
  • 1 lemon (juiced) and 1 tsp lemon zest
  • 1 Tbsp extra virgin olive oil
  • 1/4 tsp kosher salt (separate)
  • 1/4 tsp ground black pepper

Instructions:
1. Bring water and 1/8 tsp kosher salt to a boil. Pour in couscous and turn off the heat. Cover and set aside for 5-7 minutes. Fluff with a fork.
2. Toast the pistachios in a medium hot pan until fragrant. Move frequently to toast all sides for 2-3 minutes.
3. Add prepared herbs, scallions, cucumber, and diced tomato in a mixing bowl and drizzle in olive oil.
4. Zest the outside of the lemon into the mixing bowl with the vegetables, being careful not to scrape too far into the white pith.
5. Once zested, cut the lemon in half and squeeze into the mixing bowl.
6. Add the couscous, dried cranberries, salt and pepper to the bowl and mix thoroughly.
7. Serve and enjoy!
