Healthy Retirement Dining: Superfood – Nuts
Welcome to this month’s Robson Reserve Dining Services Team’s monthly superfood spotlight! This month, the teams are focused on spotlighting different types of nuts in several featured dishes perfect for healthy retirement dining, like the recipe below. Nuts are a great source of protein, healthy fats, fiber, vitamins, and minerals. They can help lower cholesterol, improve heart health, and even aid in weight management.
For our superfood recipe this month, we’re featuring a grilled brie with walnuts and apple sandwich. This delicious and satisfying sandwich is perfect for a lighter lunch when you are dining in retirement.
Ingredients:
- 1 artisan roll
- 2 slices brie cheese (thinly sliced)
- 1 Tbsp walnut halves (toasted and chopped)
- ½ granny smith apple (cored and sliced)
- 1 slice Havarti cheese (thinly sliced)
- 1 tsp canola oil
Instructions:
1. Slice bread in half horizontally.
2. To build the sandwich, place thinly sliced brie onto the bottom half of bread and sprinkle with chopped walnuts, sliced apples, a slice of Havarti cheese, and top with the other half of the bread.
3. Lightly brush oil on both sides of the skillet.
4. In a medium hot skillet, cook the sandwich on both sides until bread is toasted and cheese is melted.
5. Enjoy!
