Simple Senior Recipe for a Fresh Chimichurri

This vibrant Broccoli Stem Chimichurri is a simple senior recipe and a brilliant way to use broccoli stems, turning them into a bright, zesty, and incredibly versatile sauce. It’s perfect for drizzling over grilled vegetables, a salad dressing, or serving with your favorite protein.
Ingredients:
- 3/4 cup broccoli stems, diced
- 1/4 oz fresh parsley, chopped
- 1/8 oz fresh cilantro, chopped
- 1 clove fresh garlic, minced
- 1/4 tsp ground cumin
- 1/8 tsp kosher salt
- 1/8 tsp granulated sugar
- 1 oz apple cider vinegar
- 1/4 of a serrano pepper, seeded and minced (or more to taste)
- 1/8 cup water
- 1/8 cup canola oil
Instructions:
1. First, prepare the broccoli stems by cutting off the tough outer layer on all four sides. Dice the tender inner part into 3/4-inch pieces.
2. Next, blanch or steam the diced broccoli until it’s very tender. Drain and let it cool completely.
3. Place all the ingredients except for the oil into a blender.
4. With the blender running on low, slowly stream in the canola oil until the mixture becomes smooth and creamy.
