Packed with essential vitamins and minerals, it’s a great addition to any senior diet. This month’s superfood is a roasted delicata squash dish paired with earthy mushrooms and aromatic fresh thyme. This flavorful combination is sure to delight even the most discerning taste buds.
Ingredients:
- 8 oz. fresh delicata squash
- 5 oz. fresh crimini mushrooms
- 1 tsp fresh garlic (minced)
- 1 ½ tsp fresh thyme (minced)
- 1/8 tsp kosher salt
- 1/8 tsp ground black pepper
- 2 tsp canola oil
Directions:
1. Preheat oven to 350 degrees Fahrenheit.
2. Wash delicata squash and cut in half lengthwise.
3. Scoop out and discard seeds.
4. Slice ½ inch thick and place squash in a bowl.
5. Remove stems from mushrooms and slice in half if large.
6. Place mushrooms in a separate bowl.
7. Mix olive oil, garlic, salt and pepper in each bowl separately.
8. Place the squash and mushrooms on separate pans and roast in the oven until tender (about 10-15 minutes).
9. Once tender, combine and toss with fresh minced thyme leaves.
