To showcase the versatility of pumpkin, the dining team has crafted a comforting and flavorful pumpkin chowder. This hearty soup is perfect to enjoy as the weather cools in Arizona and provides a satisfying nutritional boost for seniors.

PUMPKIN CHOWDER RECIPE

Ingredients:

  • ½ tbsp. olive oil
  • 2 cups fresh white onion (chopped)
  • 2 tbsp. fresh garlic
  • 2 lb. fresh pumpkin (cubed)
  • 4 ½ cups of water
  • 1 ½ tsp ground cinnamon
  • ¾ tsp ground allspice
  • ¾ tsp cayenne pepper
  • 1/8 tsp ground black pepper
  • 1 tsp kosher salt
  • 1 ½ tbsp. light brown sugar
  • 1 ½ tbsp. cider vinegar
  • ¼ cup heavy whipping cream

Directions:
1. Drizzle olive oil into a hot pot and sauté the onions and garlic for about 3 minutes.
2. Add the pumpkin in and mix.
3. Add water in and bring to a boil.
4. Lower the heat and simmer and cover with lid.
5. Cook for 20-30 minutes, or until the pumpkin is tender.
6. Transfer to a blender, add in seasonings and spices and blend until smooth.
7. Return to pot, add in cream and stir until hot.
8. Enjoy!
